Autumn Coconut & Wonton Soup

Autumn Coconut & Wonton Soup

Hello lovely People

Todays recipe are asian inspired Wontons with sausage filling and a Coconut Soup.

I love Wontons so much – you can fill them will almost anything – I adore the meaty ones but vegan and vegetarian are great as well! You steam them in these little bamboo steamers which are amazing! You can basically put them onto a normal pan filled with steaming water and this steam cooks the food inside the bamboo basket on top. This works really well for vegetables but also for fish. You can use several layers on top of each other which is so great and they are very cheap to buy 🙂 Here I used the steam from the soup to cook the Wontons on top!

The Wontons:  (10-20 pieces)

  • Wonton leaves
  • 2 Sausages (I like the organic smoked ones but just use any with intensive flavor)
  • 1 TS Wasabi paste
  • 1 TS Soy Sauce

Skin the sausage and use the inside meat – mix it with the wasabi and soy sauce to get an even mixture. (This can be made with any filling, minced meat, but also vegetable fillings are amazing!) Add one tablespoon of meat to one leave of Wonton dough. Place it in the middle and then just flip up the sides, so you form a little package!

The Soup:

  • 500ml of Coconut Milk
  • 1 Carrot (cut in julienne)
  • any Chinese Mushrooms you like
  • 1 Spring onion (cut in small pieces)
  • 1 big piece of Ginger (chopped into big pieces)
  • 1 Chili (optional: cut in pieces)
  • 2 TS Soy Sauce
  • 2 TS Fish Sauce
  • Coriander for garnish

Heat the coconut milk until its boiling then add the carrots, mushrooms, spring onions, ginger and chili. Put down the heat down and boil gently. Put the bamboo steamer on top so the wontons get cooked. After ruffly 10min check if the wontons are finished or steam them some more. Finish the soup with the soy and fish sauce and garnish with coriander! Thats it 🙂 This is truly delicious and easy. You can convert this dish easily to vegan or vegetarian which is great as well and the flavor remains amazing!

I hop you’ll try it xoxo Katie
