Its Friday – I am in a good Mood 🙂
After a long and stressful week I love nothing more than to come home and cook a lovely more complex Dinner. While preparing dinner I love to light up some candles, pour myself a good glass of red wine and enjoy some relaxing music to get myself into a weekend mood!
This is a full Vegetarian menu which doesn’t feel like anything is missing! However you can basically add anything you like – each component works so well with other dishes.
For a lovely Aperitivo I would suggest my amazing Morning After Drink with a twist – called Champagne 🙂 Always works for me and basically for almost every woman… just a small tipp! This is fruity and delicious – perfect to get yourself into a weekend mood!
To serve with the Aperitivo I would suggest my Hot Tomato Salsa as an Appetizer and combine it with chips or nuts.
Then for the Main Course I suggest this little Pasta Dish with my homemade Green Pesto. You cannot imagine how good it is, its an all-time Italian Classic with amazing taste and super easy to cook. Soul-food which lifts your tired spirit for the weekend. For this Green Pesto I used:
- 2-3 Cloves of Garlic
- 2 TS Pine Nuts
- 80 gram of fresh Basil
- 40 gram of freshly grated Parmesan
- 10 gram of freshly grated Pecorino
- 100 ml Olive Oil
Mix everything together in a mixer and adjust with the olive oil to get the consistency you like. I use Salt & Pepper for seasoning, however I would wait until everything is mixed together first and you tasted it- since the Parmesan is very salty as well. I serve this recipe with Italian Penne because the pesto really sticks to this sort of Pasta.
