I just recently made this recipe inspired by Deliciously Ellas Baobab Balls she made on youtube. I changed the recipe so it fitted my taste and the result is really amazing! Baobab is a superfood that comes from an African Tree and is all over the news right now! It really doesn’t taste like a lot which is perfect for adding into various foods such a s your breakfast smoothie or my superfood bites. From what I have read researching, it is extremely high in vitamin C, six times more than there is in an orange- contains more potassium than bananas do – is very rich in iron, fibre, potassium and magnesium – and also contains antioxidants and is prebiotic! Normally I am not easily jumping on a trend like this but its just so easy to add this to any food or drink so I am trying it for the moment!
For these little Baobab-Coconut bites I used:
- 1 Cup of pitted Dates
- 1 Cup of ground Almonds
- 1/2 Cup of mixed Seeds: Flax/Pumpkin/Sunflower
- 2 TS of Chia Seeds
- 1-2 TS of Baobab Powder
- pinch of Cinnamon
- 2-3 TS Coconut Oil
- Grated Coconut to cover the balls
Put everything except the grated coconut into your food processor and mix until it becomes a very smooth paste. Now you will need to adjust your mixture to get your preferred consistency. For a more moist mixture add more dates or coconut oil and if its too moist you may add more seeds or almonds. Finally form little bites with your hands and coat them in the grated coconut. Now put it into your freezer for 25 min and you can taste them. They can be stored in the fridge for a looong time 🙂
