I am always trying to eat really healthy at lunch time and I just love a really balanced and good salad. I get really tired after a big lunch which is bad if you have to go to the office so I usually eat a salad or a soup and add eggs, fruit or chicken for an extra energy boost.
Here are just three healthy salad ideas that will keep you healthy, your calories in line and your energy level high 🙂 Here are my favorite highly nutritious and super delicious Lunch Salad ideas:
- Mixed Salad with Orange Topping and Sweet Potato-Feta Toast
This Salad is one of my favorite. I love doing this when I had sweet potato for dinner and there are left over ones. The sweet potato mash works brilliantly with feta cheese! The oranges adds an amazing fruity touch to complement the really basic oil and lemon juice salad dressing.
2. Winter Salad with Radish Topping, Avocado Slices and Fried Eggs
This is an amazing lunch for pre-and after Workouts! Its stuffed with good oils, nutrients and protein for strengthening your muscles. The radishes add a crunchy and hot kick to the hearty winter salad mix. I sometimes twist up the salad dressing with mango vinegar which is my favorite at the moment!
3. Rocket Salad with Goat Cheese and Fig Toast
Figs, Goat cheese and Rocket salad stays just one of the best combinations on the planet! The honey and balsamic dressing complements the ingredients just perfectly and brings everything together. You can always pimp your salad with adding some sprouts or dips of more goat cheese!
