I am really sorry to be so Blog-absent at the moment but I am handing in my Master Thesis in a Weeeeek (omg)!!! Anyway I though I would show you “What I eat in a Day” as a small sneak peak into my day 🙂 So here we go:
I actually didn’t eat Breakfast (I know very bad) but I made some absolutely beautiful Blondies and I put the recipe up in a separate post (click here for the recipe). They are so delicious and I had one or two of those. Actually I never eat more than one or two sweet things in a day just because I am more into savory stuff but my boyfriend has such a sweet tooth so he eats all my baking in literally a day 🙂
It was such a beautiful day so I went for a run and after I made myself this lovely Blueberry -Date Shake I used: Blueberries, Dates, Baobab Superfood Powder, Coconut Water and some IceCubes. It was absolutely delicious I think its one of my all-time favorite Drinks at the moment 🙂
For Lunch I made myself a beautiful and delicious Salmon Cream Cheese Bagel which is one of my favorite delicious and light weekend lunches. I actually did a similar one on the Blog some time ago (just click here for the recipe)!
So lately I was really feeling ill again after eating (to be honest I haven’t been so strick with my diet lately and eating lots of dairy and gluten stuff although I am allergic) so I though today I am making something which is really good for me 🙂 For Dinner I made a Quinoa Salad with steamed Veg with Avocado Pesto – super healthy and very very delicious! So for the Pesto I just mixed 1/2 of an avocado, 2 garlic, 5-7 Pecan nuts, Basil leaves, salt and pepper and lemon juice together and then poured half of it over the quinoa and veg 🙂 Sooo delicious and 100% vegan too!!!!
