I hope you had a lovely start to your Weekend! This little recipe represents one of the recipe soon to come in the next days in order of the relaunch of my Blog 🙂 I really hope you enjoy the new Design and Layout – please let me know what you think!
For the super moist Lemony Heart Muffins I used:
(Preheat oven to 180°C) (Recipe is for 12-14 Muffins, Heart-forms)
- 2 eggs
- 280g flour
- 2, 1/2 TS baking powder
- 1/2 TS salt
- 180g butter
- 350g sugar
- 1/2 fresh vanilla seeds
- 240ml whole milk
- zest of 1/2 Lemon
- Peanut Butter
Beat 2 egg whites until soft peaks form. Whisk the flour, baking powder, and salt together in a medium bowl and add the zest of the lemon. Beat the butter and add the sugar and beat until everything is creamed together. Add two egg yolks and the vanilla seeds (scratched out from 1/2 fresh vanilla stick). Add the dry ingredients one after another. Finally add the egg white and slow fold it under the mixture. Fill it into the cupcake forms and bake for 18-21 minute.
For the filling I just lined up two separate lines of peanut butter and two lines of Philadelphia into a piping bag and fill it in the middle of the heart or on top of the muffin! I added some sprinkles of colorful sugary dots to make it look nice – just be creative 🙂
