Healthy Avocado Lunch Sandwich

Good Morning Everyone

So I am always on the look for healthy but satisfying lunch ideas which makes you happy and are good for you!

This “Avocado and Feta Cheese Sandwich” is one of my favorite! I love the combination of the salty feta with the creaminess of the avocado a lot! You can vary the use of bread to your needs – you may only use one toast or make a sandwich. I used a darker bread and toasted it because I prefer this one!

Just layer a narrow amount of cream cheese over the bottom bread slice and then add the feta cheese the avocado and the salad on top. I Β dressed the salad with a little bit of olive oil, lemon juice, salt and pepper beforehand. You may add some coriander if you like, but thats optional. Then add the top slice of bread and stick something into the whole sandwich so it looks good and is easier to eat πŸ™‚

For this recipe you need:

  • 2 large slices of darker Bread
  • 1/2 to 1 Avocado
  • 4-6 narrow slices of Feta Cheese
  • Cream cheese
  • Coriander (optional)
  • Salt, Pepper, Olive Oil and Lemon Juice for seasoning
